Beast Cores were rare since they could sometimes break within their bodies during a battle especially when they were pushed to their limits. Furthermore, destroying their Beast Cores was also considered a method to kill stronger Magic Beasts since their horns were considered to be more expensive than the Magic Cores which had limited uses.
The brains, on the other hand, seemed to be a common ingredient in some sort of alchemy that even the newbies would be able to use.
As for the other parts or organs of the Apes, there was simply no market for them in this region. Even their meat could not be eaten because of possible Mana Poisoning.
Of course, there might be Alchemists willing to pay for those other parts but that only normally happens in the Capital.
Since there was no way to transport them without becoming rotten, these organs were easily ignored.
