After the guards left Kat lamented the fact she was trapped… by SOCIAL CONVENTION. You see, it was easier to escape when your captors were clearly unrepentant assholes but one of them seemed uncertain of the whole joint and the other… for all his dislike of demons wasn't even close to being evil. Made her original plan of just slowly walking out, destroying the shackles, the cells, and then any walls or people by just casually moving through them feel like kind of a dick move.
Sure this was almost a kidnapping but it's not like Kat was hurt or even properly restrained and she had to imagine that this sort of setup cost a lot of money to open, operate and maintain. Head guard might deserve some comeuppance but the others… less so. Plus, what if someone truly dangerous needed to be restrained after Kat had broken all of the chains.
